Silly Ax has been an ambition? Dream? Goal? for a bit. It began after my daughter, age 5 at the time, was diagnosed with Celiac's disease and I thought to myself after driving away from the Dr's office that "there has to be a silver lining here, and if I can't find one, I'll make one!"
My dear techy hubby helped set me up with an initial blog a few years back, but I let comparison and lack of vison stall me. I thought it had to be recipes, but let's be honest, I don't follow recipes. In addition to Celiac's, I have other rather odd food allergies, so I'm accustomed to tweaking everything I come across. Also, have you noticed that there's like 8 million recipes for stuffed peppers alone? Ok, not that many, but it was something I'd begun to notice. Now, I do have a few of my own recipes here, and I hope you find them original, but mostly helpful. I hope you come here and see this space as a help, a tool for someone new to the gluten free life. I know it would have helped me when I was diagnosed in 2015.
2023 alone saw multiple friends connecting me with individuals, or mothers of individuals diagnosed with Celiac's Disease. And in wanting to help them all, but being limited on time, my hubby mentioned that if only I had one resource that I and friends could send others to, a resource that I can update, add too, keep track of all my GF findings, and a way to stay connected to the ones who need help, like maybe a website?!
As of today, there is still much to add, I am not giving medical advice, the internet has far enough of that, much of it sketchy at best. But I will eventually share our diagnosis stories and provide other resources to serve as a help to you if you find yourself or a loved one in this autoimmune disease boat we're in; particularly Celiac's Disease; though not limited to because both my daughter and I have gone on to be diagnosed with other diseases or are still seeking answers to ongoing issues. For now, non-celiac life will be published solely on the blog portion of this site, we'll see where time and energy take this.
