Sausage Balls
These are a southern staple at Holiday gatherings, but for years they were off limits to me; until I got more familiar with gluten free ingredients, and found a delicious sausage that is actually safe with all of my spice allergies! After research and playing around with many recipes, I settled on what we like best!
I made a triple batch of these for a Christmas Open House that we hosted, and so many guests had never heard of a sausage ball before, but it was love at first bite!
These are great for an appetizer, a holiday shin dig, a game day event or even breakfast!
*Makes around 20 sausage balls
1.5 cups of Gluten free flour (Bobs Red Mill blue bag or King Arthur's Measure for Measure)
2 tsp baking powder
1/2 tsp baking soda
1 tsp kosher salt
1 TBS sugar or maple syrup
Fresh herbs, sage or rosemary or thyme or a mix - 5 sprigs? Couple tablespoons? Measure with your heart.
1lb of ground pork sausage, I prefer breakfast sausage - it's seasoned simply, but still has a little kick.
4 oz of cream cheese
1/2 cup of milk
1/2 cup of shredded cheese
1 egg
°Mix up all the dry ingredients (maple syrup if using and herbs too).
°Add the cream cheese and using your hands mix it into the dry ingredients until it's fully mixed into the flour.
°Add the milk, egg, shredded cheese and sausage! Again, using your hands, mix until all the dry ingredients are incorporated into the sausage.
°Line a pan with parchment paper and preheat the oven to 375°
°Make the balls, I find getting my hands a tad wet helps to roll out the sausage balls more easily.
°Roll them into bite sized-ish - tablespoon or two sized balls.
These do puff up a tad so leave some room between them
° Bake for 20-25 minutes, until they're getting crispy on the outside and fully cooked on the inside.
These can keep in the fridge for 3-5 days in a sealed container, and they are so easy to freeze too! Just cool them completely and toss them in a freezer bag. Thaw in the refrigerator overnight and bake at 350 degrees for about 15 minutes until they are fully warmed up!
