The pinnacle of the day, Dinner! Dinner time is so important, to be with your people, serve them comfort in the form of food and your attention. No, it's not going to be perfect, some nights it's going to be a roast chicken with homemade bread and nutritious sides, other days it's going to be bowls of gluten free cereal served somewhere in the middle of a chaotic evening. Both have their time and place and serve their purpose.
In our house, dinners are all gluten free, even though only half of us have Celiac's, even if we have company over, for the sake of ease and keeping my sanity, our Dinners are gluten free.

Philly Cheese Steaks: Steak-umm brand is gluten free (always check packages just in case ingredients change). Or shaved steak from the meat section at the grocery sauteed up with some peppers and onions, topped on a toasted GF bun with cheese.

Spaghetti and Meatballs: This requires no recipe, just cook up your favorite box of GF spaghetti and toss on your favorite GF Marinara or even a can of tomato puree with some seasoning. Use precooked/frozen GF meatballs prepared according to the package. *So many prepared meatballs contain gluten; my worst reaction to date was because of the tiniest amount of breadcrumb in meatballs. Those meatballs better be marked gluten free and verified by double checking the ingredient list too!

Tomato Soup and Grilled Cheese: I follow no recipe here; this is one of those meals where it needs to be quick and use what I have. A combination of broth, tomato puree, marinara - whatever is on hand to make a tomato soup. Simmered up with some garlic powder, oregano, maybe a spoon of pesto, a toss in a handful of parmesan or a splash of heavy cream if you have it. Whip up some grilled cheese sandwiches with your favorite GF bread and dinner is served. It's always tasty, even if it's never the same.
