Nacho Cheese Sauce

4 TBS butter
2 TBS all purpose GF flour
4 cups whole milk
4 cups shredded cheese: mild cheddar or monterey jack work best here, or a mix of both!
1 tsp kosher salt
1 tsp garlic powder
1/4 tsp cayenne pepper
Black pepper to taste
Make your roux: melt the butter in a medium saucepan. Once melted whisk in the GF flour and let it cook for a minute. Add milk and seasoning and continue to whisk on low heat until the milk just begins to thicken ever so slightly.
ADD THE CHEESE! Turn off the heat and whisk until it's a pot of melty goodness, check the seasoning to your liking and serve!
Optional: You could just use monterey jack for a white sauce and once the nacho cheese sauce is made, add in a small can of green chiles. Add jalapenos if your people like heat; it's just a great base, have fun with it!
